Brown Butter Citrus Salmon</h2>

Ingredients</div>
1.5 pounds fresh salmon fillets, pat dry (I used skin on)<br />
¼ cup honey<br />
salt & pepper<br />
7 tablespoons unsalted butter, chopped<br />
Juice of 1 lime (1 tablespoon)<br />
Juice of 1 lemon (1 tablespoon)<br />
1 tablespoon fresh orange juice<br />
¼ teaspoon garlic powder<br />
½ teaspoon salt<br />
½ teaspoon black pepper<br />
½ teaspoon honey (optional)<br />
Zest of lemon, lime and orange (optional)<br />
8 flour tortillas, heated in oven until crisp on outside and chewy on the inside (optional)<br />

Make an Easy Lemony Blueberry Pie<br />
<br />

Instructions</div>
Preheat oven to 400 degrees F.<br />
Brush salmon fillets generously with honey and sprinkle generously with salt and pepper.<br />
Place in a foil-lined pan (skin side down). Set aside.<br />
In a light-colored pot, over medium heat, add butter.<br />
Allow butter to melt, stirring often.<br />
When butter has melted continue to stir as the butter begins to foam and bubble slightly.<br />
Keep stirring or swirling the butter constantly as the butter solids begin to turn golden in color and release a fragrant aroma.<br />
*Remove butter from heat immediately and pour into a heatproof bowl. (brown butter can burn fast)<br />
Let cool.<br />
Stir in lime juice, orange juice, lemon juice, garlic powder, honey, salt and pepper into the brown butter.<br />
Pour over salmon fillets.<br />
Bake for 12 minutes. Turn the oven to a low broil and broil for about 2-3 minutes (watch carefully) or until salmon is flaky and tender.<br />
Remove from oven and shred salmon. (add citrus zest if desired)<br />
Place salmon in prepared tortilla shells and top with toppings.<br />
Drizzle on citrus brown butter sauce.<br />

16 oz. fresh strawberries, hulls removed (can also use frozen)<br />
1 can frozen limeade concentrate<br />
4 cups water, divided. May need more (can also use sparkling water for a fizzier punch)<br />
2 cups orange juice (without pulp)<br />
4 cups strawberry soda<br />
1½ cups tequila, can use more<br />
½ cup cointreu or triple sec, can use more<br />

Instructions</div>
Process 1 cup of water and strawberries in a food processor until smooth.<br />
Add to a large pitcher.<br />
Stir in frozen limeade.<br />
Add in orange juice, strawberry soda, tequila and cointreau.<br />
Stir in 3 cups of water. (Can use more water if you think it’s too sweet, but remember punch is suppose to be sweet so don’t water it down too much.)<br />

Let's stick with food this time! You know what that means....time for a detox! Below you will find what herbs work best for this!<br />
<br />
<b>Cilantro</b> contains phytonutrients, flavonoids and active phenolic compounds. It helps your body get rid of heavy metals by binding to them. Eating a diet rich in cilantro can also have great anti-inflammatory and digestive benefits. 4 liters of diet lemon-lime soda (That’s two 2-liters for the mathematically challenged.)</div>

1 bag of pebble ice (You can buy it at Sonic Drive-In or at most grocery stores in the deli or meat departments.)</div>

Cheddar Muffin Bites</h2>

2 cups all-purpose flour</div>

1 tablespoon baking powder</div>

½ teaspoon salt</div>

5 tablespoons cold unsalted butter, grated</div>

1 cup Cracker Barrel Extra Sharp Cheddar Cheese, grated</div>

½ cup Cracker Barrel Mediterranean Herb cheddar cheese, grated</div>

1½ cups cold buttermilk</div>
<div>
Melted butter and parsley flakes, to brush on hot muffins</div>

Preheat oven to 400 F.</div>

In a large bowl, whisk together flour, baking powder and salt.</div>

Cut in the butter, just until the butter is coated with flour mixture and crumbly.</div>

Stir in the cheeses until coated with flour mixture.</div>

Make a well in the center of the bowl and add buttermilk.</div>
<div>
Use a rubber spatula or your hands to gently incorporate the buttermilk into the dry mixture just until moistened.</div>

Batter will be very sticky. Do not over stir.</div>

Grease a mini muffin tin.</div>

Use a mini ice cream scoop to drop the batter into the muffin tin.</div>

Bake for 8-10 minutes until golden.</div>

Pick out your desired baking pan, and butter the edges. Pour in your cobbler filling.</div>

Tear apart one of your pie crust and drop the dough throughout the cobbler filling. When done, top your cobbler with the remaining crust.</div>

1 cup diced onions</div>

1 cup diced celery</div>

3 cups russet potatoes peeled and diced into small cubes</div>

1 cup whole milk, warmed</div>

3 cups sharp cheddar cheese, shredded (can use a mixture of cheeses if desired. I like smoked cheddar and sharp cheddar)</div>

Toppings: shredded cheese, fresh parsley, chopped bacon, dice tomatoes, cheese, pickles, buttered croutons.</div>

In a large deep skillet brown ground turkey and ground sausage. Drain and set aside.</div>

In the same deep skillet at 2 tablespoons of butter and diced carrot, onions and celery.</div>

Sauté until tender over medium heat.</div>

Stir in cubed potatoes, chicken broth, italian seasoning, and garlic powder.</div>

Bring to a boil, reduce heat, cover and simmer just until potatoes are tender (but not to soft).</div>

Remove from heat and set aside.</div>

In a large soup pot, melt 4 tablespoons of butter.</div>

Whisk in flour a little at a time stirring constantly over medium heat.</div>

Cook for 1-2 minutes.</div>

Stir in warm milk and warm heavy cream.</div>

Stir in cheeses until mixture is smooth and creamy. Do not bring to a boil or simmer.</div>

Pour meat & vegetable mixture into the cheese sauce and stir until well combined.</div>

For the last year and a half, I've been juicing and making green smoothies! Below, I'll tell you the benefits of green juices and I'll also list some recipes!<br />

Green juices are very alkalizing, cleansing, healing, hydrating and restorative. Disease, inflammation, pain and cancer all thrive in an acidic environment. <br />
You can rebuild muscle and damage cells through green juicing.<br />
Green juice offer a large cross-section of different nutrients from a variety of different greens and sprouts. Green juice supply the body with chlorophyll. Chlorophyll has many benefits to the body; neutralizes toxins in the body, helps purify the liver, improve blood sugar problems, regulates digestion, helps rebuild tissues, antibacterial and much more.<br />
A 32 oz glass of fresh green juice may supply much of the protein an average adult needs each day. Believe it or not, leafy greens are 30% protein.<br />
Green vegetable juice won’t spike your blood sugar and insulin level like fruits and sweet vegetables like carrots and red beets will. Its best to combine those in your green juices instead of drinking alone.<br />

Baked Chicken Stuffed with Pesto and Cheese</div>

(Makes two servings, but recipe can easily be doubled or tripled)</div>

Ingredients:</div>

2 large boneless, skinless chicken breasts</div>
<div class="separator" style="clear: both; text-align: center;">
2 T Basil Pesto with Lemon or your favorite commercial pesto</div>
<div class="separator" style="clear: both; text-align: center;">
2 T low-fat sour cream</div>
<div class="separator" style="clear: both; text-align: center;">
2 T grated mozzarella cheese</div>
<div class="separator" style="clear: both; text-align: center;">
(I used heaping tablespoons of pesto, sour cream and cheese) </div>
<div class="separator" style="clear: both; text-align: center;">
2 eggs, beaten (or if they're large eggs one will probably be enough)</div>

3 T finely grated Parmesan cheese</div>

3 T almond flour (or almond meal, but almond flour is better for this because it's more finely ground)</div>

Instructions:</div>

Preheat oven to 375F/190C. Spray a small casserole dish with non-stick spray. Trim any visible fat from chicken breasts, then put them one at a time inside a heavy plastic bag and pound with meat mallet until the chicken is as thin as you can get it. Don't worry too much about the shape or whether there are some loose pieces, you can tuck them in when you roll up the chicken.</div>

In a small bowl mix together the basil pesto, sour cream, and grated mozzarella. Use a rubber scraper to spread a thin layer of this mixture over each chicken breast, stopping about 1/2 inch from the edge of the chicken (so it doesn't run out so much as it cooks.) Roll up the chicken breasts and secure them with a couple of toothpicks. (I roll them so the finished piece is as thin as I can get it so they will cook quickly.)</div>

Prepare two bowls, one with the beaten egg and the other with the grated Parmesan-almond flour mixture, seasoned with black pepper to taste. Dip each chicken breast roll first into the egg mixture and then into the Parmesan-almond flour mixture, patting it on so the chicken breast roll is well-coated with the mixture. </div>

Put chicken breasts into the casserole dish and bake until the chicken is firm and lightly browned. (Start checking after about 25-30 minutes; total baking time will be 30-35 minutes.) Serve hot.</div>

So, I've been trying different punch recipes because I'm living in the summer time (in my mind). This punch is tried and true and SO yummy! This recipe is so easy and there's even a video to follow! Enjoy!<br />

Sparkling Strawberry Margarita Punch<br />
Serves: 1 large pitcher<br />
<br />
Ingredients
16 oz. fresh strawberries, hulls removed (can also use frozen)<br />
1 can frozen limeade concentrate<br />
4 cups water, divided. May need more (can also use sparkling water for a fizzier punch)<br />
2 cups orange juice (without pulp)<br />
4 cups strawberry soda
1½ cups tequila, can use more<br />
½ cup cointreu or triple sec, can use more<br />

Instructions<br />
<br />
Process 1 cup of water and strawberries in a food processor until smooth.
Add to a large pitcher.
Stir in frozen limeade.
Add in orange juice, strawberry soda, tequila and cointreau.
Stir in 3 cups of water. (Can use more water if you think it’s too sweet, but remember punch is suppose to be sweet so don’t water it down too much.)<br />
